Chipotle Skirt Steak with Avocado Salsa
Serve this Southwestern winner at your next barbecue.
1 tablespoon chipotle chile powder
3⁄4 teaspoon salt
11⁄4 pounds beef skirt steak
2 plum tomatoes, coarsely chopped
1 ripe medium avocado, pitted and peeled,
cut into 1⁄2-inch pieces
1⁄2 cup salsa verde or mild salsa
1. Prepare outdoor grill for direct grilling over medium
heat. In cup, with fork, stir chipotle chile powder
and salt. Use to rub on steak.
2. Prepare salsa: In medium bowl, stir tomatoes, avocado,
and salsa. (Makes 2 cups.)
3. Place steak on grill over medium heat. Cook
steak, turning once, 6 to 8 minutes for medium-rare or
until desired doneness. Transfer steak to cutting board
and let stand 5 minutes to set juices for easier slicing.
Cut against the grain into thin slices. Serve with avocado
salsa. Makes 4 main-dish servings.
