Top-quality i n g r e d i e n t s are the basic elements of all types of good cooking. This is especially true for sandwiches where every bite counts. From the bread to the olive oil, I believe that each component of everything we eat should be delicious on its own.
NATURE OF SANDWICHES
Sandwiches are generally thought of as two thin slices of bread put together with a filling, such as meat, cheese, fruit, etc. For instance, they may be merely two pieces of buttered bread put together or they may be elaborate both as to shape and contents. In reality, many different things are considered as sandwiches. Sometimes one piece of bread spread with a filling and usually decorated in some way is served with afternoon tea or a very light luncheon. Then, again, sandwiches often consist of three layers of bread instead of two, and for other kinds the bread is toasted instead of being used plain.
The first sandwich, created in 1762, was a matter of necessity. The Earl of Sandwich, an enthusiastic gambler, requested bread and meat dishes that he could consume while continuing to gamble, and at that moment the sandwich was born. Every culture has its sandwich: The Italians relish their paninis and calzones, the Mexicans enjoy burritos, bagels and lox are a Jewish tradition, and the Croque Madame and Croque Monsieur are standard fare in Paris bistros.
These days, you don’t even need sliced bread to make a sandwich. It could just as easily be a filled and rolledup flour tortilla. And the meat is optional too: No one thinks twice about eating a pita pocket filled with a crisp Greek salad or a vegetable frittata tucked between thin slabs of herbed focaccia. You can perk up an old standard by adding a tasty new condiment like one of our flavored mayonnaises (try Ginger-Sesame Mayonnaise or Chipotle Mayonnaise), or by serving it on your own home-baked bread.
